We had a few visitors for Labor day, so we decided we should make them do some cooking, Chopped style! Our teams this time were Kade and Dad, Nikki and Abby, and Sam and Mom.
For our appetizer round the basket ingredients were:
Granola bars
Shrimp
Fruit Cocktail
Nikki and Abby came up with some breaded shrimp and a parfait.
Dad and Kade also had breaded shrimp and a side of fruit cocktail with granola.
Mom and Sam did shrimp and smoothies.
For the entree round the basket ingredients were:
Cornish Hen
Something from the garden
Honey
Ginger Snaps
Kade and Dad baked the entire ginger snap coated Cornish hen and had a delicious side of buttery honey carrots. It took a while for it to cook so we had to deduct points for that.
Mom and Sam went with a delicious stir fry with everything in it. They also included some extra chicken with a yummy honey mustard sauce.
Nikki and Abby round out a fantastic round with a gorgeous salad (by the amazing Abby who made it all by herself and only cut her finger once!) and some fried chicken coated with honey and ginger snaps and an awesome blooming onion.
Our final rond of dessert included:
Kiwi
Agave Nectar
Mascarpone
3 different types of chocolate
Kade and Dad used some of the left over ginger snaps, coated them with the Mascarpone and then added the fruit and chocolate on top.
Nikki and Abby made a delicious spread by mixing all the ingredients together and put that on top of some zucchini bread with some chocolate shavings. (Unfortunately, the zucchini bread clashed with the spread.)
Mom and Kade also used the rest of the ginger snaps added the mascarpone and fruit and chocolate on top.
I had a blast eating all these awesome meals! I'm so proud of how everyone went out of their comfort zone and came up with some awesome ideas. It was a ton of fun watching everyone make these beautiful creations!!!
